Vegetable Magic..... and ....Heading Home !!!

...................This will be our last post from Galmi. We are leaving early to be with Susie's folks who have some health troubles. It is 6:30 AM Thursday and we leave in about a half hour for the 7 hour car ride to Niamey (the plane was cancelled !). At 12:40 AM tomorrow (Friday) we are scheduled to leave Niamey on Air France and hope to arrive home at 6:15 PM Friday. ..............We'll have a final post after we arrive home ! It has been fun to share this journey with you !!!!!

Many of you know that we are primarily vegetarians. So, we have been thankful that this is the limited "vegetable season" in Niger. Vendors would often come to our door, either alone or with some of their kids in tow, all lugging baskets of various vegetables.

Here is Susie with Soule who sold us some wonderful eggplant and zucchini. (Soule also is the maker of cinnamon rolls for our weekly Wednesday Galmi station coffee break.

At the co-op on station, we were able to buy rice, couscous, lentils, and pasta as well as canned tomatoes, tomato paste, and even canned beans. With all of the local vegetables and with some sauce packets we brought from home, we have had varied, interesting, and acutally quite good dinners. On our next to last evening, we "had the neighbors over" so we could use up some of what we had left. Also, it was Dr. Mark Couture's birthday so Susie made him a cake !! Pictured here clockwise from Susie are Scott Hartnett, a surgical resident finishing up his program in Philadelphia; Mark Couture, a retired general surgeon who serves overseas several times a year training African surgeons through the PAACS program (Pan Africa Association of Christian Surgeons); and Hal Vick, an ob-gyn from Oregon. The menu included: garbanzo beans with chopped eggplant served over rice with Indian sauce; carrots, zucchini , and onions served over rice with Szechuan sauce; homemade coleslaw (with homemade yogurt instead of mayonnaise), leftover sliced eggplant with tomato sauce (an old Middle Eastern recipe from a lady at our church), fresh pineapple, and a cranberry-orange cake made from a mix we brought from home. Everyone left with a full stomach !!
