


Here is Susie with Soule who sold us some wonderful eggplant and zucchini. (Soule also is the maker of cinnamon rolls for our weekly Wednesday Galmi station coffee break.
At the co-op on station, we were able to buy rice, couscous, lentils, and pasta as well as canned tomatoes, tomato paste, and even canned beans. With all of the local vegetables and with some sauce packets we brought from home, we have had varied, interesting, and acutally quite good dinners. On our next to last evening, we "had the neighbors over" so we could use up some of what we had left. Also, it was Dr. Mark Couture's birthday so Susie made him a cake !! The menu included: garbanzo beans with chopped eggplant served over rice with Indian sauce; carrots, zucchini , and onions served over rice with Szechuan sauce; homemade coleslaw (with homemade yogurt instead of mayonnaise), leftover sliced eggplant with tomato sauce (an old Middle Eastern recipe from a lady at our church), fresh pineapple, and a cranberry-orange cake made from a mix we brought from home. Everyone left with a full stomach !!

first, i hope your parents are ok. then it sounds like you had a good time at Galmi. where is Dr. vick from?? i am an oregonian myself...he looks familiar. but i see lots of faces and always think people look like someone i know, so maybe it is just that! blessings, becky
